Figs are in season starting in June through October and can be the perfect addition to your favorite salad. Combined with tomatoes and onions, this salad offers an awesome balance of flavor. For a “Healthy You!” approved version, leave off the feta cheese.
I love that this “Healthy You!” approved Farmers’ Market Potato Salad is made with wholesome ingredients (and without mayo)! It’s a perfect side for chicken or fish and great for outdoor picnics or barbecues. If you aren’t a fan of terragon, simply substitute with rosemary, thyme or basil.
With salmon, quinoa, chickpeas, golden raisins, almonds and arugula, I don’t think there could be a better balance of textures and flavor than what’s in this dish. There’s a little bit of spicy and a little bit of sweet to please everyone’s taste buds!
