Ingredients
- 3/4cup quinoacooked
- 1cup Swiss chardwashed and stems removed
- 1 cup romaine (or other leafy green)washed and stems removed
- 2 eggshardboiled and sliced
- 8-10 cherry tomatoeshalved
- 2tablespoons extra virgin olive oil
- 4tablespoons white wine vinegar
- 1/4teaspoon salt
- 1/4teaspoon pepper

Instructions
- In a small bowl, whisk together the olive oil, white wine vinegar, salt and pepper and set aside.
- In a large bowl, combine quinoa, Swiss chard, romaine and tomatoes.
- Top with dressing and mix until coated.
- Divide on to two plates.
- Top with hardboiled eggs and serve.
