- 2 whole eggs
- 1/2cup spinachstems removed
- 1/2cup tomatoesdiced
- 1/4cup oniondiced
- saltto taste
- Ground black pepperto taste
- extra virgin olive oil spray

Instructions
- Whisk eggs, salt and pepper, and set aside. Coat non-stick skillet with olive oil spray, and heat on medium.
- Add spinach, tomatoes and onion, and sauté until tender. Pour egg mixture over vegetables.
- Gently scrape eggs around skillet. Cook for 1-3 minutes, depending on how well-cooked you like your eggs.
