We are in peak season for artichokes (March through May)! Conveniently, artichokes can be prepared in numerous ways – you can bake, boil, microwave, steam or roast them. Although they may not be the easiest vegetable to make, artichokes are delicious and have a healthy dose of vitamin C, folate, potassium and fiber. Definitely a vegetable worth paying attention to and incorporating into your diet.
