Ingredients
  • 8 corn tortillas
  • 2 (15 oz) cans black beansrinsed and drained
  • 1/4cup hot sauce
  • 2tablespoons water
  • 1/2cup tomatoesdiced
  • 1/2 avocadodiced
  • 1tablespoon onionsminced
  • 1tablespoon jalapeñosminced (optional)
  • 1/8teaspoon salt
  • 2teaspoons lime juicefresh squeezed
  • 16 oz glass of wine(optional)

Instructions
  1. For salsa, combine tomatoes, avocado, onions, jalapeños, salt and lime juice in a small bowl, and set aside.
  2. Combine hot sauce, water and black beans in blender or food processor, and blend until smooth. Heat bean mixture in saucepan on low-medium heat or in microwave-safe bowl for 1-2 minutes.
  3. Preheat oven to 350 degrees. Place tortillas on baking sheet or directly on oven rack, and bake for 3-5 minutes on each side, or until tortilla is crispy and starts to brown.
  4. Top tortillas with black bean mixture, lettuce and salsa.
