Ingredients
  • 3/4cup quinoacooked
  • 1cup Swiss chardwashed and stems removed
  • 1 cup romaine (or other leafy green)washed and stems removed
  • 2 eggshardboiled and sliced
  • 8-10 cherry tomatoeshalved
  • 2tablespoons extra virgin olive oil
  • 4tablespoons white wine vinegar
  • 1/4teaspoon salt
  • 1/4teaspoon pepper
Servings:
Instructions
  1. In a small bowl, whisk together the olive oil, white wine vinegar, salt and pepper and set aside.
  2. In a large bowl, combine quinoa, Swiss chard, romaine and tomatoes.
  3. Top with dressing and mix until coated.
  4. Divide on to two plates.
  5. Top with hardboiled eggs and serve.
