Ingredients
- 1cup quinoauncooked
- 1 avocadodiced
- 1medium tomatodiced
- 1/2 red oniondiced
- 1tablespoon extra virgin olive oil
- 2tablespoons lime juicefreshly squeezed
- 1/4teaspoon salt
- 1/4teaspoon cracked black pepper

Instructions
- Cook quinoa according to package directions. Set aside and let cool.
- In a small bowl, combine alive oil, lime juice, salt and pepper.
- Add avocado, tomatoes and red onion to quinoa. Gently stir in lime juice mixture.
