Ingredients
  • 2 whole eggs
  • 1/2cup spinachstems removed
  • 1/2cup tomatoesdiced
  • 1/4cup oniondiced
  • saltto taste
  • Ground black pepperto taste
  • extra virgin olive oil spray
Servings:
Instructions
  1. Whisk eggs, salt and pepper, and set aside. Coat non-stick skillet with olive oil spray, and heat on medium.
  2. Add spinach, tomatoes and onion, and sauté until tender. Pour egg mixture over vegetables.
  3. Gently scrape eggs around skillet. Cook for 1-3 minutes, depending on how well-cooked you like your eggs.
