Blueberry Banana Smoothie Bowl

I get excited about breakfast. I get even more excited when I have a delicious and nutritious breakfast that is really fast and simple to make like this Blueberry Banana Smoothie Bowl.

I usually add almond milk when I drink smoothies, but for a smoothie bowl, I leave out the almond milk and use yogurt so it's thicker and easier to eat with a spoon. I hope you enjoy it as much as I do!

Ingredients
  • 1cup plain yogurt
  • 1/2cup frozen blueberries
  • 1/2 bananasliced
  • 1tablespoon shaved coconut
  • sliced almonds

Instructions
  1. In a blender, blend together yogurt and blueberries. Place smoothie in desired bowl and top with banana, coconut, and almonds.

Coconut Vanilla Cake

Another dessert to satisfy my cravings! This Coconut Vanilla Cake is a nice, quick and easy (healthy) sweet treat. I love that the cake is moist and airy. Topping it with coconut and yogurt gives it that extra something special.

Ingredients
  • 2tbsp coconut oilmelted
  • 2tbsp full fat yogurt
  • 2 eggs
  • 2tbsp honey
  • 2tsp vanilla
  • 2tbsp coconut flour
  • 2tsp baking soda
  • 1/2tsp salt
  • 1tbsp plain yogurt
  • unsweetened dried coconut
  • cinnamon

Instructions
  1. Divide first 8 ingredients evenly into two ramekins. Whisk well to mix.
  2. Place ramekins in microwave and heat on high for 45 seconds to 1 minute.
  3. Optional: top vanilla cake with 1 tbsp plain yogurt, sprinkle of unsweetened dried coconut and sprinkle of cinnamon.
  4. (*If you prefer, in a medium bowl, add coconut oil, yogurt, eggs, honey, vanilla, coconut flour, baking soda, and salt. Divide the mixture evenly into two ramekins. Microwave on high for 1 minute. Top with 1 tbsp plain yogurt and sprinkle of unsweetened dried coconut and cinnamon.)
